Lobster (or Crab) Bacon Swiss Quiche

Level: Easy Prep Time: 15 minutes Cook Time: 50 minutes Yield: 6 - 8 servings

INGREDIENTS

  • 1 deep dish pie crust

  • 4 slices bacon

  • 2 cups lobster or crab meat

  • ¼ cup scallions, sliced

  • 1 cup Swiss cheese, shredded

  • 4 eggs

  • 1 - 12ozcan evaporated milk (not the sweetened, condensed milk)

  • ½ teaspoon salt

  • dash pepper

  • dash nutmeg

  • fresh cilantro

DIRECTIONS

  1. Preheat oven to 375 degrees.

  2. Line Pie pan with a pie crust.

  3. Cook bacon until crisp and set on paper towel to drain

  4. Layer half of the lobster meat, scallions, and Swiss cheese in pie crust

  5. Repeat process for remaining half

  6. Whisk together eggs and then add evaporated milk. Season with salt, pepper, and nutmeg. Pour over lobster mixture. Careful not to overfill  The lobster (or crab) takes up a lot of room. I’ve also made this is 1.5 cups lobster and there’s plenty.

  7. Crumble bacon into small pieces and sprinkle on top.

  8. Carefully place pie shell in middle rack of oven with a cookie sheet on a rack below it to catch any drips.

  9. Bake for 50 minutes (until filling is sturdy).

  10. Just before serving, toss in the chopped cilantro.
