Cold Sesame Noodles

INGREDIENTS

  • 1 pound spaghetti

  • Tbls Dark Soy Sauce

  • Tbls Toasted Sesame Oil

  • 1 Tbls Chinese Black Vinegar

  • 2 Tbls sugar

  • 1 tsp Chili Oil

  • 3 Scallions sliced diagonally

DIRECTIONS

1 - Bring pasta water to a boil. While doing so, combine all ingredients except the pasta in a large bowl.
Cook the noodles al dente.

2 - Drain noodles and immediately pour into the bowl with the sauce. Toss constantly until all the sauce is absorbed into the noodles. Chill and serve garnished with sliced scallions. Toasted sesame seeds are optional.

NOTES

The key to this recipe is to mix the sauce first and add the hot noodles right out of the pot and toss together, stirring constantly. The noodles will absorb all of the sauce as they cool. The noodles should be a dark even color when done.
