Lamb Chops Scottadito

Ingredients

  • 1 eight bone Rack of Lamb

  • 4 cloves garlic, finely chopped

  • 2 tablespoons chopped fresh Oregano

  • 2 tablespoons chopped fresh Parsley

  • 1/4 cup extra-virgin olive oil

  • salt and pepper to taste

Directions

  • Cut the rack of lamb into chops, pound them lightly to achieve a half inch thickness and place in a non reactive pan (a glass or stainless steel baking dish will work.)

  • Chop garlic and sprinkle over the chops.
    Rough chop the fresh oregano and parsley and add them to the lamb chops.
    Add olive oil, salt and pepper.
    Turn the cops to coat both sides. Cover and refrigerate at least 2 hours.

  • Prepare a charcoal grill, preheat a gas grill or grill pan if cooking inside. Cook over high heat for 5 minutes per side for medium rare. The outside will be well seared with the insides still pink.

  • Transfer to a warm platter and serve immediately.
