HOW TO: Pan Seared/Oven Roasted Dry Aged Steak

Level: Easy Prep Time: 10 min Cook Time: 1 hr Yield: 2 servings

INGREDIENTs

  • 2, 1-1.5 inch Dry Aged Steaks

  • Salt

  • Pepper

SPECIAL TOOLS

  • Instant Read Meat Thermometer

  • Oven safe frying pan

DIRECTIONS

Pan Seared Oven Roasted

  1. Salt and pepper dry aged steak, bring to room temperature before cooking

  2. Pre-heat oven to 450 degrees F

  3. Use an oven-safe heavy frying pan/cast iron skillet

  4. Turn stove top burner to high heat and warm skillet until piping hot

  5. Put teaspoon of oil in the pan to heat

  6. Place dry aged steak in the pan and sear about 90 seconds on each side to lock in juices

  7. Place pan in oven to finish cooking. Roast the meat for 6-9 minutes, depending on how you like it cooked

  8. Check steak temperature using Instant Read Meat Thermometer for proper doneness

  9. Remove from oven and let rest for 10 minutes
